  1. Placed on a baking tray: Tomatoes, Red Pepper, Garlic
  2. Season with salt, black pepper, and cajun. Then, Drizzled with generous amount of Bertolli Extra Light Olive Oil and add aromatic herbs Thyme and Rosemary.
  3. Roasted in preheated oven 200 C for 25-30 minutes
  4. Transfer the roasted vegetables to a blender: add beef stock, blend until smooth, pour the blended mixture into a pot over medium heat, stir in coconut milk, bring to a simmer nad let it cook or 10-15 minutes
  5. And add Bertolli Extra Virgin Olive Oil
  6. Voilaa, ready to service~
